Growing up in Paris, France, Alain started his passion for food by learning how to bake at an early age. He began his apprenticeship at Jean Ferrandi School and La Coupole in Paris. After working in several restaurants, he returned to Jean Ferrandi to obtain a degree from L'Ecole Supérieure de Cuisine Française. He worked at Restaurant Lameloise in Chagny, and was the sous chef at Restaurant Morot-Gaudry in Paris.

Alain moved to the United States in 1991, and was the sous chef at The Sherman House in San Francisco. He opened his own restaurant, Le Charm French bistro, in late 1994. With Alain as the executive chef, Le Charm appeared on the San Francisco Chronicle's Top 100 Restaurant list for four years in a row. After 14 years at Le Charm, Alain sold his share of the restaurant in 2008.

In late 2009, Alain opened La Bedaine with the concept to provide hospitality to working families, by offering a complete french meal ready to be finished at home in fifteen minutes or less.
